Blackberries are a sweet fruit, combined with the very contrasting brie cheese makes this sandwich very interesting to try. Use fresh blackberries for the jam, but if you don’t have them, you can use frozen ones.
Using frozen blackberries will release more water, but by cooking slowly, the water content will decrease by itself. Cooking time may be longer.
Balsamic Vinegar:

Fresh thyme:

Spread butter on one side of four slices of bread. The buttered side should be facing down and sprinkle the bread with slices of Brie cheese. Gently fry the bread until the brie is softened and the bread is browned, and sprinkle with chopped thyme on the cheese.
Spread the remaining bread slices with blackberry jam and place the jam face down on top of the brie cheese. Spread the top side of the bread with butter and turn it over gently. Then continue by frying the sandwich until the bottom of the bread is browned and the brie cheese is melted.
