Step by step to make Entomatadas, a popular Mexican snack.

Step 1:

Put the jalapeno pepper, garlic in a pan and add water to cover it. Cook over medium heat.

Step 2:

Then, mix in 1/4 cup of the onion, grated cheese and set aside.

Step 3:

Once the tomatoes and jalapeno peppers are cooked, add them to a blender and puree until smooth.

Step 4:

Heat 1 tablespoon of vegetable oil in a skillet over medium heat, add the remaining onion and cook until the onion is translucent.

Step 5:

Add the tomato sauce you just made to the skillet, cook for 2 minutes, season with salt to taste, and reduce heat to simmer.

Step 6:

In a separate skillet, heat the remaining vegetable oil over medium heat, fry the tortillas one by one, place on a plate lined with paper towels (to absorb excess oil).

Ingredients

  • 1 ½ lb Tomatoes for sauce
  • 1 Jalapeno pepper: For a bold flavor, omit if you don't like spicy
  • 2 garlic cloves small: For a sweet and savory flavor
  • 1 tablespoon vegetable oil
  • ¾ cup white onion finely diced
  • Salt to taste
  • 12 corn tortillas: You can double the amount if you double the ingredients.
  • 8 ounces Queso fresco or farmer cheese crumbled About 2 cups
  • 3 Tablespoons vegetable oil to fry tortillas

Instructions

  1. Place the jalapenos, tomatoes, and garlic cloves in a saucepan and add water to cover the ingredients. Bring to a boil for about 15 or 20 minutes.
  2. Combine 1/4 cup of the onion with the grated cheese and set aside. When the tomatoes, jalapenos, and garlic are done, place them in a blender and puree until smooth.
  3. Heat a tablespoon of vegetable oil in a skillet over medium heat, add the remaining onion, and cook until the onion is translucent, which may take about 5 minutes.
  4. Add the tomato sauce to the skillet and cook for 2 minutes, season with salt, and reduce the heat to a simmer for about 6 minutes.
  5. Heat the remaining vegetable oil in a separate skillet over medium heat, and fry the tortillas one by one until they are all cooked through, then place them on a paper towel set on a plate (to absorb the excess oil). Some people don't fry the tortillas, but just heat them with a little oil.
  6. Once all the tortillas are fried, dip them one by one into the tomato sauce you just made.
  7. Place the tortillas on a plate and spoon the cheese and onion mixture. Fold the tortillas and process with the rest. When everything is ready, you are ready to make the entomatadas, spoon the remaining sauce and place on top of all the tortillas and the cheese and onion mixture.

Notes

If you don't like spicy food, you can omit the jalapeno from your recipe.
