This time we show a delicious recipe, namely sweet potato crusted fish, and we choose Mahi mahi fish for this. Yuca-crusted Mahi is one amazing dish, especially when served on a bed of spicy creamed spinach, it is one of mine and my family’s favorite dishes. The taste and texture of mahi mahi fish is very impressive. This is an environmentally friendly fish, and this is why we always crave it.

Recipe for Mahi Sweet Potato Crusted Fish

When we don’t have yuca, we often substitute sweet potato crust, lime, garlic and simple spinach. It’s not like in a restaurant but the taste is no less than other delicious food and Mahi with crispy sweet potato is also very easy to serve.

Initially, we tried it with an egg wash for fish, this worked well, but it turned out it could also be done without using eggs. So if you want to skip this stage, that’s okay. Mahi-mahi can also be coated with potato skin on one side only, but if you want to coat both sides you can also coat it.

You only need to make a second “nest” of sweet potatoes before you are ready to flip the fish, then flip it for the second side.

How many potatoes do you need? One sweet potato is enough to cover or coat 4 fillets (if you choose the option of only coating one side). If you want to make double side crusts, you have to prepare two sweet potatoes.

Ingredients

  • Provide 3 tablespoons of olive oil
  • One medium sweet potato, peeled and grated
  • Provide 4 Mahi Mahi fillets, each fillet about 6 ounces.
  • White peppers, salt to taste.

Instructions

Using a large non-stick frying pan, heat the oil over medium heat, now add 4 “nests” of grated sweet potato, do it in two batches, if your pan can’t fit all the Mahi-Mahi fillets.

Add the fillets on top of the nests and let sit until the edges of the sweet potatoes are browned. Carefully turn each fillet piece over using a large spatula. Cook until the mahi mahi fish is cooked. If it is cooked, sprinkle with white pepper and salt, serve while still hot.
