1. San Marzano Tomatoes

What are San Marzano Tomatoes? There is a lot of confusion about this type of tomato. Here I will explain what this tomato is. San Marzano Tomatoes are plum tomatoes with a longer shape, low acidity, few seeds, and rich flavor.

According to AVPN (the True Neapolitan Pizza Association), this is the best tomato. If you are making an authentic Neapolitan pizza, then you are required to use San Marzano tomatoes. For it to be called a “San Marzano” tomato, there are requirements that must be met by this type of tomato.

Among the requirements for San Marzano tomatoes are:

  • Must be planted in fertile areas such as around Mount Vesuvius in Campania, Italy.
  • Canned tomatoes of this type must contain the real D.O.P certification and be labeled with the designation “Pomodoro S. Marzano dell’Agro Sarnese-Nocerino.”

Note: There are many products sold in grocery stores with the San Marzano product label, but they are not the real thing. So, when shopping for San Marzano tomatoes, check the DOP label, and avoid products with the “San Marzano Style” label, because they are not necessarily real. Choose tomatoes that have been peeled with labels such as Gustarosso or Rega. This is better than buying tomatoes with the SAN MARZANO label but it turns out that they are not real tomatoes.

San Marzano Substitute: If you can’t find the real product, we recommend you replace it with tomatoes such as Bianco in Napoli. This tomato is very concentrated and sweet, grown in California.

Open the can of tomatoes and use tongs to release all the juice from the tomatoes. Then, the strained tomatoes are placed in a large blender cup. Add olive oil and a little salt.

Step 2:

Take your immerse blender, and puree your tomatoes until they are mostly smooth. If you don’t have an immersion blender, you can use a food processor or a blender tray. Avoid over-blending as it can make the sauce soupy!

TIP: If you want a thicker sauce, strain the tomato puree through a fine mesh sieve until you get the consistency you want.

Step 3:

Add optional toppings, you can add whatever toppings you want. Add garlic powder to chopped herbs.

Step 4:

Sprinkle with your favorite toppings, use as much as possible but not too much, especially on pizzas. I usually use a tablespoon or two at first, if not enough then we will add according to our wishes.

Storage Instructions

In this recipe we make a larger amount of sauce, of course, there will be a lot left over. You can store the remaining San Marzano Pizza Sauce for future use.

The way to store it is to put it in an airtight container and store it in the refrigerator. The sauce will last in the refrigerator for 1 week, and if you want to extend the shelf life even more, you can store it in the freezer. In the freezer, this sauce will last for 6 months.

What kind of pizza goes well with this sauce?

You should pair this sauce with Neapolitan-style pizza dough, with cold fermented pizza dough, or it also goes well with NY-style dough.

As for thicker pizzas like Sicilian or Focaccia, I don’t recommend it. You sometimes need a thicker, sweeter sauce.
