Step 1:

In a large saucepan, combine heavy cream, whole milk, and sugar. Place on the stove over medium heat, stirring occasionally until warm but do not boil.

In another bowl or pan, crack the eggs and separate the yolks. Add the remaining sugar to the egg yolks and beat the egg yolks until they appear smooth or soft with a pale yellow color.
