How do you quickly enjoy summer squash or gray squash? The 3-ingredient sauteed summer squash is a quick way to enjoy the bounty of your squash in peak season. This three-ingredient stir fry also works for gray squash (calabacitas), yellow squash, and zucchini (courgettes). In just 10 minutes you can enjoy it.

When summer squash is at its peak season, I want to share a quick way to enjoy the squash you harvest, just add spices and sauté it. Use yeast and chili powder to add flavor to your squash. Remember, you can try this recipe on yellow squash, gray squash, and zucchini. Before we look at the recipe, let’s dive back into summer squash.

We tested this delicious recipe with 3 types of squash: yellow summer squash, gray squash known as calabacitas, and Korean gray squash, zucchini also known as courgettes. This type of honey has the same texture but the taste is different, even though it is not significant.

In general, a greener squash will taste more bitter and grassy, but that doesn’t mean the zucchini is very bitter, but if you feel zucchini is a bit bitter, then you can try yellow squash which tastes sweeter than the other types.

When Gray Squash Replaces Avocado

Today’s interesting fact about squash is that it is a substitute for avocado. In America, avocados are currently very expensive due to high demand, so many people use gray squash as a substitute. What’s interesting is that the taste is very similar to standard taquería guacamole: spicy, bright, rich and of course very satisfying.”

Well, this shows that gray squash is so delicious soft, and creamy that it is an alternative substitute for avocado.

Other types of squash are similar but we didn’t use them to experiment with this recipe. If you have it you can try and experiment more. The squash we haven’t tested yet are pattypan and golden zucchini. Both types of squash taste sweeter and might be good as experimental material.

  2. when you see there are many types of the same fruit or vegetable, even though usually only one type is available.
  3. You can search on the internet, or ask Google, and then you will find the answer, depending on your location.

How to Make 3-Ingredient Sauteed Summer Squash

If you want to try a squash stir-fry recipe with only 3 ingredients, I say that this is very easy, don’t worry, quickly you know how to do it.

  1. Wash and cut the squash, heat your frying pan with a little oil, sauté the squash briefly with a little salt.
  2. Add the nutritional yeast, stir-fry again for a minute, and season with chili powder or other spicy ingredients, and you’re done.

If your pan is large, you can make more, such as for two portions. However, for faster and better results, you only need to make one serving.

Ingredients

  • 1 pound summer squash (500 grams) or yellow, gray squash, Korean, courgettes, calabacitas, zucchini, pattypan, or golden zucchini
  • One tablespoon of olive oil or other neutral cooking oil
  • Prepare enough salt
  • 2 Tablespoons nutritional yeast
  • Chili powder shichimi togarashi, you can also use chili flakes according to taste.

Instructions

  1. Slice the squash about 1/4 inch (1/2 centimeter) thick. The size should be easy to bite.
  2. Heat oil in a large frying pan, use medium heat, when the oil is hot, add the sliced squash in one layer, season with salt.
  3. Don't touch the squash until the bottom is brown, this takes about 5 minutes. If it's been 5 minutes and it's not brown, you can increase the heat.
  4. Turn the squash periodically until both sides are browned, but not all of it should be browned (don't let it burn). Sprinkle nutritional yeast over the squash and stir to combine. Cook until the yeast is evenly distributed. Season with chili flakes or shichimi togarashi and serve as soon as possible.

Notes

If the Squash becomes soft when it is about to finish cooking, remove it immediately and season immediately. We expect the squash to be tender, but not overcooked.
