This time we will share a unique cake recipe, its name is unique, and its appearance is unique and stunning, this is Dr. Seuss Cookies. To make this cake you don’t need to make the dough from scratch like other cakes such as carvel ice cream or Golden Corral Chocolate Chess Pie. So, in making this we used soft Lofthouse-type sugar cookie recipe and super bright Americolor gel food coloring. This will make you like making it and will make it often.

Ingredients to make Dr. Seuss Cookies

  • 2 1/2 cups cake flour
  • 1 1/2 tsp baking powder
  • 2 tsp cornstarch
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 1/4 cup all vegetable shortening (unflavored), at room temperature
  • 1/2 cup salted butter, at room temperature
  • 1 large egg
  • 2 tsp vanilla or almond extract
  • 1 large egg white
  • Nonpareil sprinkles
  • Neon/electric food coloring (preferably gels)

Instructions

  • Sift cornstarch, flour, baking powder and salt in a large bowl
  • Then mix with an electric stand mixer, using medium speed, beat the butter, shortening and sugar until fluffy and pale in color, maybe about 4 minutes.
  • Then add the egg, and stir until evenly mixed, add the egg white, add vanilla extract, or you can replace it with almond extract, mix until evenly mixed.
  • While the mixer is running, slowly add the dry ingredients and stir until just combined.
  • Divide the dough into 4, 5 or 6 colors, you can add more if you want more colors.
  • Take one ball of dough and put it back in the mixing bowl, add the food coloring you want. Then repeat this process again for the other dough balls using the coloring you want. It may take 30 minutes to 2 hours.

Now The time to Bake It.

  • Preheat oven to 375F
  • If the dough is cold, you are ready to roll. Take a grape-sized ball of dough of each color, and press it, rolling it between the palms of your hands.
  • Take the ball and roll it into a cylinder, about 10 inches long.
  • Roll this cylinder into a round shape, and roll the edges of the cake into a bowl of nonpareils
  • Bake on a baking sheet, don’t forget to line the baking sheet with baking paper, bake for around 10 to 12 minutes.
