  • 1/4 tsp thyme

  • 1/8 tsp celery seeds
  • 1/4 tsp fresh ground pepper, about 8 grinds

Second Ingredients

  • 2 celery stalks, diced
  • 1 tbsp. olive oil
  • salt and pepper to taste
  • 1 lb. lean ground beef
  • 1 tsp. sugar
  • 14.5oz. canned tomatoes (whole, diced, crushed, sauce… use what you have)
  • 12 oz. beef stock
  • 16 oz. bag frozen mixed vegetables (peas, carrots, corn and green beans)
  • 1 cup gluten free orzo pasta (uncooked)
  • 2 cups beef or chicken broth (or use water)
  • 1 ladle of reserved pasta water


  • Stir the first seven ingredients to replace the onion soup mix replacement, you can also use the one sold in the store.
  • In a 4 qt. soup pot or you can also use a Dutch oven, brown the meat with 1 tbsp olive oil, breaking it up with a spatula. Add salt and pepper seasoning.

Continue until the meat completely turns brown. then add the onion soup mixture.

  • Add flavorings such as celery, tomatoes and mixed vegetables. If it is frozen, you can thaw it first.
  • Add the stock and all the stock, you can use all the stock or all the water if you want 3-1/2 cups of liquid. Bring to a boil and reduce heat, cover and cook for 30 minutes.
  • Cook the pasta in salt water (just add a little salt). So, don’t add dried pasta directly to the soup. So, cook it first so the texture is better.
  • If you like thick soup, then set aside some of the starchy water and put it in a saucepan. Stir until it shows consistency. Add more pepper, salt or according to your preference.
  • Let it sit for 2 hours before eating (during this sitting process, the soup will thicken), and before serving, you only need to warm it briefly.
  • This delicious, hot soup is the ultimate meal of the evening. It’s perfect for ending a cold evening. Serve with grated cheese, and add a few slices of crusty bread.
