The first time I liked Vietnamese Fried Rice was at dinner at a restaurant in Malaysia, it turned out that this rice was simple but had a tempting taste. Prepare Chinese sausage (lap cheong)
Chinese sausage is a must-have ingredient in Vietnamese fried rice recipes. Usually, Chinese sausage is available in two versions, savory and spicy. Chinese sausages are usually made from pork or lard. However, you can choose a non-pork version such as one that uses chicken. Meanwhile, the spicy version of the sausage is made from chilies.

Using cold rice vs freshly cooked rice
The best rice for making Vietnamese Fried Rice is rice that has been left out for a day because it will be drier so it is delicious when fried. Meanwhile, when rice is just cooked, it will usually be soft and this will give a watery texture and be less enjoyable to enjoy as fried rice. We do not recommend using hot or freshly cooked rice.
Alternative if you don’t have leftover rice. You can cook rice as usual, but then cool it by removing it from the rice cooker, cooling it under a fan so that the rice is cold and not hot.

Ingredients
- 2 tablespoons neutral cooking oil
- 8-10 medium-sized shrimp (150 grams), peeled, deveined, tails removed and cut into pieces
- 1 small yellow or sweet onion (110 grams), chopped
- 3 Chinese sausages (lap cheong), diced
- 3-4 garlic cloves, minced
- 2 cups (300 grams) frozen mixed vegetables, you can thaw them or leave them frozen, when cooked they will thaw themselves.
- ½ teaspoon sea salt
- ½ tablespoon chicken powder
- ½ tablespoon granulated sugar
- ½ tablespoon white pepper
- 6 cold cooked white rice or leftover rice (850 grams)
- 4 eggs
- Fish sauce 1 to 2 teaspoons (optional).
Instructions
- Heat a frying pan over high heat and add one tablespoon of oil.
- Add the prawns and stir for one minute or until cooked
- Remove and set aside, and increase heat to high
- Add the onions and cook for one minute
- Add sausage, stir for 3 minutes
- Add garlic and cook for one minute
- Add the vegetables and cook for 2 minutes, if they are still frozen you may need to increase the cooking time.
- Add white rice, stir with vegetables. Continue mixing, until the rice turns brown. Make sure the rice is not lumpy.
- Add previously cooked shrimp, season with salt, chicken powder, sugar and white pepper (you can substitute black pepper but adjust). Stir again.
- Push the rice to the side and add the remaining cooking oil to the center of the pan. Add the egg, and stir until half cooked, and quickly add the rest of the food, keep stirring for a while, the egg will cook and the egg will coat some of the rice.
- Remove from heat and add fish sauce, because this is optional, you can use it or skip it. If you add fish sauce, taste and check the taste. Good luck!
